Welcome December 2012!

First off, I know I know, I am terrible at blogging because I never keep up. NEV.ER. Now that we have only a month til the new year, maybe I should start my resolutions early and put "take time to blog" high up there.

And to get into that December/Christmas spirit, the other day I whipped up some Mint Chocolate Cake bars.  I'm sure you've seen the recipe for "Easy Cake Bars" or "Lazy Bars" or whatever you'd like to call them- the goodness of a cookie/brownie/bar with only 3 simple ingredients.  Well, I was thinking the other day about Panera's Mint Crinkle Cookies- how good they are, the chocolate, mint, & powdered sugar- and how sad I am they aren't in their bakery cafes right now.  So that's when I thought up these mint chocolate bars- easy!

Mint Chocolate Cake Bars

Ingredients:
-1 chocolate cake mix (I used Chocolate Fudge, but use whatever you'd like)
-1/3 c vegetable oil
-2 eggs
-1 tsp peppermint extract
-Andes candies- finely chopped
-Powdered sugar

Directions:
-Preheat oven to 350 degrees
-Grease/spray a 13x9 pan
-Beat together eggs, vegetable oil, cake mix, and peppermint extract
-Unwrap & chop up a few andes candies- I had probably 1/3 c worth of chopped candy
-Mix in Andes mints, then spread batter into pan
-Bake 18-22 minutes or until toothpick inserted comes out clean
-Remove pan from oven, sprinkle powdered sugar over the top

This is all it takes folks!

These are basically a brownie, but since I based it off of cake mix, I had to roll with the cake bar title....it flows better than Mint Chocolate Brownies. Sounds fancier.  The Andes basically melt into the bars, so they aren't like mint chips- but it adds to the mint chocolate flavor.  If I had more time I would have dressed them up a little, maybe a mint cool whip frosting or a chocolate glaze- make them a little more rich. But these were gobbled up at work, and at home :)  Enjoy!
